Adam Smith, executive chef of Coworth Park including Michelin-starred Woven by Adam Smith, has excelled in this year's Great British Menu, impressing the esteemed judges Tom Kerridge, Nisha Katona and Ed Gamble, as well as visiting Olympians.
For this BBC Two series, 32 of the UK's top chefs competed with creative menus that celebrate The Olympic and The Paralympic Games. Adam's fish course was triumphant in Finals Week and resulted in him winning a place in the Great British Menu banquet at the British Ambassador's Residence in Paris, which aired on BBC Two on Friday night.
At the banquet, the chefs wished Team GB good luck for the 2024 Summer Olympic Games. Inspired by the athletes' journey from Great Britain to France, and as a celebration of Adam's culinary training and background in haute cuisine, Adam's dish was titled 'The Road to Paris'. During the competition, it featured Cornish brill, trout and truffle mousse, cauliflower puree, Romanesco cauliflower, pickled cucumber, caviar, and two sauces – a chicken truffle sauce and an English sparkling wine and lemon verbena sauce.
Reflecting on his experience on Great British Menu, Adam Smith commented: "Participating in Great British Menu and cooking alongside so many brilliant chefs was an absolute privilege, especially with the brief that allowed us to celebrate the amazing achievements seen in The Olympics and The Paralympics over the years. With my winning dish, The Road to Paris, I wanted to create something that was a nod to classical French cooking and haute cuisine, as this is something that's shaped my career. Cooking at the Banquet was such an honour, and I'm proud that my fish dish celebrated this year's Olympic Games in Paris whilst also reflecting my style of cooking and the dishes I create at Woven by Adam Smith."
Adam Smith is Executive Chef at Coworth Park near Ascot, including the one Michelin-starred restaurant, Woven by Adam Smith, which opened in September 2022. The menu at Woven by Adam Smith offers a tapestry of familiar flavours reimagined in unexpected ways, combining the classics with modern touches and layers of personal experience. Martin Hulbert Design created the interiors for the restaurant, crafting a theatrical and contemporary space that blends seamlessly into the Georgian manor house setting, whilst complementing and elevating the dining experience.
