Paxton & Whitfield's new cheese variety called Cullum to celebrate 225th birthday

This year marks Paxton & Whitfield's 225th birthday and to celebrate, the UK's oldest cheesemonger with a store in Bourton-on-the-Water in Gloucestershire launches 'Cullum' – an exclusive, brand new British hard ewes' milk cheese. This cheese has been developed together with one of Paxton & Whitfield's long-standing partners, the award-winning cheesemaker Martin Gott of St James Cheese, Cumbria.

James Rutter, managing director of Paxton & Whitfield, says: "We are delighted to work with Martin and his team at Holker Farm on this exciting and exclusive new British ewes' milk cheese. We named the cheese 'Cullum' after Stephen Cullum, who was the original founder of the market stall back in 1742 which started the roots of our business. Cullum is the first of many innovations to come out of our new cheese maturation rooms in the Cotswolds as we continue to champion the incredible craft of artisan cheesemaking and support our cheesemakers in more sustainable farming initiatives."
